Chai recipe

Nap time is supposed to be my break time. Now if I could just explain that to 6 month old TG, I’d be in business.

Passing the time by making CHAI from scratch. Simple enough process. Simmer whole spices gently in water for half an hour-ish. Turn off heat and steep tea leaves in the spice water for 5 to 10 minutes. Strain into container and add sweetener of your choice. 

Today’s ingredients (spices all dried and whole):
2 cinnamon sticks
1 tsp ginger
1 tsp allspice
1 tsp cardomom 
1/2 tsp cloves
1/2 tsp white pepper
2 star anise
1 nutmeg (cracked)

8 cups water
3 bags chocolate pu-erh tea
1/2 cup maple syrup
1/2 cup raw sugar (usually honey, but I’m all out)
1/2 tsp vanilla 

Keep refrigerated. Makes one half gallon chai base. Mix one part chai base with 2 parts milk. Can be enjoyed cold or hot (heat gently so as not to burn the milk).
